Fresh Strawberry Basil Salsa
Makes 2 Cups
Ingredients
Juice & ½ the Zest of 1 Lime
1 LB Fresh Strawberries, hulled and chopped
½ Red Onion, minced
¼ Cup Packed Fresh Basil Leaves, finely sliced (chiffonade) setting aside an extra handful for garnish**
½ Yellow Pepper, chopped
½ Jalapeno Pepper, finely chopped
¼ tsp Salt
1 Tbl Olive Oil
1 tsp Balsamic Vinegar
Here is what you do….
Prep all ingredients as stated above, (chopped, hulled, zested etc…).
Whisk together lime juice, olive oil, Balsamic vinegar and salt in a medium size bowl.
Place remaining ingredients in bowl and mix until all items are evenly coated with liquid.
Place in refrigerator until ready to use.
If your strawberries are very ripe and fresh, do not make more than 4-5 hours ahead of serving time, as strawberries may soak up too much liquid and become mushy.
Garnish with basil leaves and serve with tortilla chips, toasted and sliced pita bread or over your favorite grilled fish, (halibut or salmon).
**a great substitute for Basil is Cilantro. Wash and prep just as you would the Basil, setting aside a small handful of leaves for garnish.
